Lazy Falafel Salad

Disclaimer: No chickpeas were brutally ground to pieces in the making of this salad.

Well, at some point they were, but not during the simple act of constructing this salad. What I'm trying to get at is this: the Lazy Falafel Salad is not a "put on your apron and individually peel chickpeas to make falafel" kind of recipe. It's more like a "here's how I quickly made an exciting salad on a weeknight" sort of a deal. Frozen falafel is your friend on a busy night when you're trying to eat vegetables without resigning to a cold and lifeless salad eating experience.

A quick salad deserves a speedy introduction; so, enough of the chatter. Let's get a move on dinner already!

What:

mixed greens

pre–made/frozen falafel

tomatoes

pickles

red onion

a vegan stand–in for feta (in this case, vegan mozzarella)

dressing of choice

How:

I really don't need to tell you how to make a salad. I cooked frozen falafel with an air fryer for an extra crispy crust.

What did I use and why?

Trader Joe's Fully Cooked Falafel: it's the best frozen falafel I've ever had. It's also the only frozen falafel I've ever had. Would recommend.

Trader Joe's Champagne Style Vinaigrette: I happened to be purchasing falafel at Trader Joe's, and I thought this might compliment the salad well. In my humble opinion, I was correct.
